When and how do you think the Canon of the New Testament was finalized?

All Christians of all denominations all over the world agree they want
to use our Canon (list of books) of the New Testament (that is an
astonishing miracle). How the final list came into being does not
seem important for serving Jesus the Messiah. Does it matter
to us when and how the original recipe of Coca Cola, or Marmite, or Kentucky
Fried Chicken was finalized?
